Ingredients
- 4 salmon fillets
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 oranges, peeled and segmented
- 1 grapefruit, peeled and segmented
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup of honey, 2 tablespoons of soy sauce, 1 tablespoon of olive oil, and minced garlic. Season the salmon fillets with salt and pepper, then brush the honey glaze over the fillets.
- Place the salmon fillets on the grill and cook for 4-5 minutes per side, or until the salmon is cooked through and has grill marks. Remove from the grill and set aside.
- In a large bowl, combine the orange segments, grapefruit segments, thinly sliced red onion, diced avocado, and chopped cilantro.
- In a small bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of lime juice, 1 teaspoon of honey, and salt and pepper to taste. Pour the dressing over the citrus salad and toss to combine.
- Serve the grilled salmon with the citrus salad on the side. Enjoy!
