  • In a small bowl, whisk together 1/4 cup honey, 1/4 cup Dijon mustard, 2 tablespoons olive oil, 2 cloves minced garlic, 1 teaspoon paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  • Place the chicken drumsticks in a large resealable plastic bag and pour the honey mustard mixture over them. Seal the bag and massage the chicken to coat evenly. Marinate in the refrigerator for at least 30 minutes, or up to 24 hours.
  • Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the marinated chicken drumsticks on the rack, allowing any excess marinade to drip off.
