Honey Garlic Tofu with Snow Peas

Ingredients
- 1 block (14 oz) of firm tofu, drained and cubed
- 2 cups of snow peas, trimmed
- 3 cloves of garlic, minced
- 1/4 cup of soy sauce
- 3 tablespoons of honey
- 1 tablespoon of rice vinegar
- 1 tablespoon of cornstarch
- 2 tablespoons of vegetable oil
- 1/4 teaspoon of red pepper flakes (optional)
- Cooked rice, for serving
- Sesame seeds, for garnish
- Green onions, chopped, for garnish
Instructions
- In a small bowl, whisk together 1/4 cup of soy sauce, 3 tablespoons of honey, 1 tablespoon of rice vinegar, and 1 tablespoon of cornstarch. Set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the cubed tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant. Add the snow peas and cook for an additional 2-3 minutes until they are bright green and slightly tender.
- Pour the honey garlic sauce over the snow peas and tofu in the skillet. Add 1/4 teaspoon of red pepper flakes if desired. Stir well to coat the tofu and snow peas in the sauce. Cook for 2-3 minutes until the sauce thickens and coats the tofu and snow peas.
- Remove from heat and serve the honey garlic tofu and snow peas over cooked rice. Garnish with sesame seeds and chopped green onions. Enjoy!
