Ingredients
- 1 pound of large shrimp, peeled and deveined
- 1/4 cup of honey
- 3 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 1 tablespoon of olive oil
- 1 head of cauliflower, riced
- 1/4 cup of chopped green onions
- 1/4 cup of chopped cilantro
- 1 teaspoon of sesame seeds
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together 1/4 cup of honey, 3 cloves of minced garlic, and 2 tablespoons of soy sauce. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Season with salt and pepper.
- Pour the honey garlic sauce over the cooked shrimp and toss to coat. Cook for an additional 1-2 minutes until the sauce thickens slightly. Remove from heat.
- In a separate skillet, heat the riced cauliflower over medium heat for 5-7 minutes, stirring occasionally, until heated through.
- Divide the cauliflower rice among serving plates and top with the honey garlic shrimp. Sprinkle with chopped green onions, cilantro, and sesame seeds before serving.
