Honey Garlic Shrimp Stir-Fry

Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of soy sauce
- 2 tablespoons of honey
- 3 cloves of garlic, minced
- 1 tablespoon of cornstarch
- 1/4 teaspoon of red pepper flakes
- 2 tablespoons of vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of snap peas
- 2 green onions, chopped
- Cooked rice, for serving
Instructions
- In a small bowl, whisk together 2 tablespoons of soy sauce, 2 tablespoons of honey, 3 cloves of minced garlic, 1 tablespoon of cornstarch, and 1/4 teaspoon of red pepper flakes. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and stir-fry for 2-3 minutes, or until pink and opaque. Remove the shrimp from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced red and yellow bell peppers and snap peas. Stir-fry for 2-3 minutes, or until the vegetables are crisp-tender.
- Return the shrimp to the skillet. Pour the honey garlic sauce over the shrimp and vegetables. Cook, stirring constantly, for 1-2 minutes, or until the sauce has thickened and everything is well coated.
- Remove from heat and stir in the chopped green onions.
- Serve the honey garlic shrimp stir-fry over cooked rice and enjoy!
