  • 2 cups of water

Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  • In a small bowl, whisk together 1/4 cup of honey, 3 cloves of minced garlic, 2 tablespoons of soy sauce, and 1 tablespoon of rice vinegar. Set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the peeled and deveined shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp is pink and opaque.
  • Pour the honey garlic sauce over the cooked shrimp in the skillet. Stir to coat the shrimp evenly and cook for an additional 1-2 minutes, or until the sauce thickens slightly and coats the shrimp.
  • To serve, spoon the fluffy quinoa onto plates and top with the honey garlic shrimp. Garnish with sesame seeds and chopped green onions. Enjoy!
