Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a small bowl, mix together 1/4 cup of honey, 3 cloves of minced garlic, 2 tablespoons of soy sauce, 1 tablespoon of olive oil, and 1 teaspoon of sesame seeds to make the glaze.
  • Place the salmon fillets on the prepared baking sheet and season with salt and pepper. Brush the honey garlic glaze over the salmon fillets, coating them evenly.
  • In a separate bowl, toss the mixed vegetables with 2 tablespoons of balsamic vinegar, 2 tablespoons of olive oil, 1 teaspoon of dried thyme, 1/2 teaspoon of garlic powder, and salt and pepper to taste.
  • Spread the seasoned vegetables on another baking sheet in a single layer.
  • Place both the salmon and vegetables in the preheated oven. Roast for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender, stirring the vegetables halfway through cooking.
