  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1/2 cup of snap peas
  • 3 cloves of garlic, minced
  • 1/4 cup of soy sauce
  • 1/4 cup of honey
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of sesame oil
  • 1 tablespoon of water
  • 1 tablespoon of sesame seeds, for garnish
  • 2 green onions, chopped, for garnish

Instructions

  • In a large bowl, toss the cubed tofu with 2 tablespoons of cornstarch until evenly coated.
  • In a small bowl, whisk together 1/4 cup of soy sauce, 1/4 cup of honey, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, and 1 tablespoon of water to make the sauce. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the minced garlic and cook for 1 minute until fragrant.
  • Add the sliced red and yellow bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Return the crispy tofu to the skillet and pour the honey garlic sauce over the tofu and vegetables. Toss everything together until the tofu and vegetables are coated in the sauce.
  • Garnish with sesame seeds and chopped green onions before serving.
  • Serve the honey garlic tofu stir-fry over cooked rice or noodles. Enjoy!
