Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a small bowl, whisk together 1/4 cup balsamic vinegar, 2 tablespoons honey, minced garlic, Dijon mustard, and 1 tablespoon olive oil. Season with salt and pepper.
  • Place the salmon fillets on the prepared baking sheet and brush the honey balsamic glaze over the top of each fillet.
  • Roast the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the glaze is caramelized.
  • While the salmon is roasting, toss the mixed vegetables with 2 tablespoons of olive oil, dried thyme, garlic powder, salt, and pepper on another baking sheet.
  • Roast the vegetables in the same oven for 15-20 minutes, or until they are tender and slightly caramelized.
  • Once the salmon and vegetables are done, remove them from the oven and serve the honey balsamic glazed salmon with the roasted vegetables on the side.
