Ingredients
- 4 salmon fillets
- 1/4 cup honey
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- Salt and pepper to taste
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together 1/4 cup of honey, 2 tablespoons of balsamic vinegar, 1 tablespoon of olive oil, and 1 teaspoon of minced garlic. Season with salt and pepper to taste.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the honey balsamic glaze over the salmon fillets, coating them evenly.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon is baking, prepare the mango salsa. In a medium bowl, combine 2 diced ripe mangoes, 1/2 finely chopped red onion, 1 diced red bell pepper, 1/4 cup of chopped fresh cilantro, and the juice of 1 lime. Mix well and season with salt to taste.
- Once the salmon is cooked, remove it from the oven and let it rest for a few minutes.
- To serve, spoon the mango salsa over the glazed salmon fillets. Enjoy!
