Instructions

  • In a small bowl, whisk together 1/2 cup balsamic vinegar, 1/4 cup honey, 2 cloves minced garlic, 1 tablespoon olive oil, 1 teaspoon dried thyme, and salt and pepper to taste.
  • Place the chicken breasts in a resealable plastic bag and pour half of the balsamic-honey mixture over the chicken. Seal the bag and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  • Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the used marinade.
  • Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  • While the chicken is grilling, pour the remaining balsamic-honey mixture into a small saucepan. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the glaze has thickened slightly.
  • Once the chicken is cooked through, brush the glaze over the chicken during the last 2-3 minutes of grilling.
  • Remove the chicken from the grill and let it rest for a few minutes before serving. Garnish with fresh parsley and serve with your favorite sides. Enjoy!
