Ingredients
- 2 pounds of beef silverside, thinly sliced
- 1/4 cup of rock salt
- 1/4 cup of brown sugar
- 2 tablespoons of coriander seeds, crushed
- 1 tablespoon of black pepper
- 1/4 cup of apple cider vinegar
- 2 tablespoons of honey
Instructions
- In a large bowl, mix together 1/4 cup of rock salt, 1/4 cup of brown sugar, 2 tablespoons of crushed coriander seeds, and 1 tablespoon of black pepper.
- Add the thinly sliced beef silverside to the bowl and coat the meat evenly with the spice mixture. Cover and refrigerate for 24 hours to marinate.
- After 24 hours, remove the meat from the refrigerator and rinse off the excess spice mixture. Pat the meat dry with paper towels.
- In a small bowl, mix together 1/4 cup of apple cider vinegar and 2 tablespoons of honey. Brush the meat with the honey and vinegar mixture, ensuring it is evenly coated.
- Hang the meat in a well-ventilated, dry area for 2-3 days until it is dried and firm to the touch. The biltong is ready to eat once it has reached the desired dryness.
- Slice the biltong thinly and enjoy as a delicious snack or appetizer.
