Instructions

  • Rinse the navy beans and place them in a large pot. Cover with 6 cups of water and let soak overnight.
  • Preheat the oven to 325°F (165°C).
  • After soaking, drain the beans and return them to the pot. Add enough water to cover the beans by 1 inch. Bring to a boil, then reduce heat and simmer for 45 minutes.
  • In a small bowl, mix together the chopped onion, ketchup, maple syrup, molasses, brown sugar, Dijon mustard, salt, and black pepper.
  • Transfer the partially cooked beans to a baking dish. Stir in the maple syrup mixture until well combined.
  • Cover the baking dish with a lid or aluminum foil and bake in the preheated oven for 1 1/2 to 2 hours, or until the beans are tender and the sauce has thickened, stirring occasionally.
