Maple Baked Beans

Ingredients
- 1 pound dried navy beans
- 1 onion, finely chopped
- 1/2 cup ketchup
- 1/2 cup maple syrup
- 1/4 cup molasses
- 1/4 cup brown sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cups water
Instructions
- Rinse the navy beans and place them in a large pot. Cover with 6 cups of water and let soak overnight.
- Preheat the oven to 325°F (165°C).
- After soaking, drain the beans and return them to the pot. Add enough water to cover the beans by 1 inch. Bring to a boil, then reduce heat and simmer for 45 minutes.
- In a small bowl, mix together the chopped onion, ketchup, maple syrup, molasses, brown sugar, Dijon mustard, salt, and black pepper.
- Transfer the partially cooked beans to a baking dish. Stir in the maple syrup mixture until well combined.
- Cover the baking dish with a lid or aluminum foil and bake in the preheated oven for 1 1/2 to 2 hours, or until the beans are tender and the sauce has thickened, stirring occasionally.
- Remove from the oven and let the beans cool for 10 minutes before serving. Enjoy your maple baked beans as a delicious side dish!
