  • Stir in 1/2 cup of chopped almonds.
  • Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.
  • Spread the coconut mixture evenly into the prepared baking dish, pressing down firmly.
  • Cover with plastic wrap and freeze for at least 4 hours, or until firm.
  • Once the coconut mixture is frozen, remove it from the baking dish and cut into 8 bars.
  • In a microwave-safe bowl, combine 2 cups of chocolate chips and 2 tablespoons of coconut oil.
