Instructions

  • Preheat the oven to 325 degrees F.
  • In a small bowl, mix together 1/4 cup of olive oil, 2 tablespoons of chopped fresh rosemary, 2 tablespoons of chopped fresh thyme, 2 tablespoons of chopped fresh sage, 4 cloves of minced garlic, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  • Place the turkey breast on a rack in a roasting pan. Pat the turkey dry with paper towels.
  • Rub the herb mixture all over the turkey breast, making sure to get under the skin as well.
  • Roast the turkey breast in the preheated oven for 1 1/2 to 2 hours, or until the internal temperature reaches 165 degrees F, basting with pan juices every 30 minutes.
  • Once cooked, remove the turkey breast from the oven and let it rest for 15 minutes before slicing and serving.
