Ingredients
- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh rosemary
- 2 tablespoons chopped fresh thyme
- 2 tablespoons chopped fresh parsley
- 4 cloves garlic, minced
- 1 lemon, sliced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Rinse the chicken and pat dry with paper towels. Place the chicken in a roasting pan.
- In a small bowl, mix together 2 tablespoons of olive oil, 2 tablespoons of chopped rosemary, 2 tablespoons of chopped thyme, 2 tablespoons of chopped parsley, and 4 cloves of minced garlic.
- Rub the herb mixture all over the chicken, including under the skin and inside the cavity. Season the chicken with salt and pepper to taste.
- Place the sliced lemon inside the cavity of the chicken.
- Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the juices run clear and the internal temperature reaches 165 degrees F (74 degrees C).
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
