Instructions

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Rinse the chicken and pat dry with paper towels. Place the chicken in a roasting pan.
  • In a small bowl, mix together 2 tablespoons of olive oil, 2 tablespoons of chopped rosemary, 2 tablespoons of chopped thyme, 2 tablespoons of chopped parsley, and 4 cloves of minced garlic.
  • Rub the herb mixture all over the chicken, including under the skin and inside the cavity. Season the chicken with salt and pepper to taste.
  • Place the sliced lemon inside the cavity of the chicken.
  • Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the juices run clear and the internal temperature reaches 165 degrees F (74 degrees C).
  • Remove the chicken from the oven and let it rest for 10 minutes before carving.
  • Serve the herb roasted chicken with your favorite side dishes and enjoy!
