Instructions

  • Preheat the oven to 375°F (190°C).
  • Rinse the chicken and pat dry with paper towels. Place the chicken on a roasting rack in a roasting pan.
  • In a small bowl, mix together 2 tablespoons of olive oil, 2 tablespoons of fresh rosemary, 2 tablespoons of fresh thyme, 2 tablespoons of fresh parsley, 4 minced garlic cloves, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to create the herb crust mixture.
  • Rub the herb crust mixture all over the chicken, making sure to coat it evenly.
  • Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the thigh without touching the bone.
  • Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving.
