  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips

Instructions

  • In a mixing bowl, cream together 1/2 cup of softened butter and 1/2 cup of powdered sugar until light and fluffy.
  • Add 2 cups of all-purpose flour and 1/4 teaspoon of salt to the butter mixture. Mix until a dough forms.
  • Roll out the dough on a floured surface to about 1/4 inch thickness. Use a small round cookie cutter to cut out circles of dough.
  • Place the dough circles on a baking sheet lined with parchment paper. Use a small Hello Panda cookie stamp to imprint the panda face on half of the circles.
  • Bake the cookies at 350°F for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack.
  • In a small bowl, mix together 1/4 cup of cocoa powder, 1/4 cup of heavy cream, and 1/2 teaspoon of vanilla extract to make the chocolate cream filling.
  • Spread a small amount of the chocolate cream on the plain cookie circles and sandwich them with the stamped cookie circles.
  • Melt 1/4 cup of chocolate chips and drizzle over the filled cookies for decoration.
