  • 4 cups beef broth

  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 4 carrots, peeled and sliced
  • 3 potatoes, peeled and cubed
  • 8 ounces mushrooms, sliced
  • 1/4 cup chopped fresh parsley

  • 1 teaspoon dried thyme
  • 4 carrots, peeled and sliced
  • 3 potatoes, peeled and cubed
  • 8 ounces mushrooms, sliced
  • 1/4 cup chopped fresh parsley

Instructions

  • In a large bowl, combine the beef stew meat, flour, salt, and black pepper, tossing to coat the meat evenly.
  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef in batches and brown on all sides. Remove the beef and set aside.
  • Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
  • Return the browned beef to the pot. Pour in the beef broth and red wine, stirring to scrape up any browned bits from the bottom of the pot. Stir in the tomato paste, bay leaves, and dried thyme.
  • Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 1 hour, stirring occasionally.
  • Add the sliced carrots, cubed potatoes, and sliced mushrooms to the pot. Cover and continue to simmer for an additional 45 minutes to 1 hour, or until the beef and vegetables are tender.
  • Remove the bay leaves from the stew. Season with additional salt and pepper to taste. Stir in the chopped fresh parsley before serving.
  • Serve the hearty beef and mushroom stew hot, and enjoy!
