Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/4 cup soy sauce
- 1/4 cup pineapple juice
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 cup pineapple chunks
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a small bowl, mix together 1/4 cup soy sauce, 1/4 cup pineapple juice, 2 tablespoons brown sugar, 2 cloves minced garlic, and 1 teaspoon grated ginger to make the marinade.
- Place the peeled and deveined shrimp in a resealable plastic bag and pour half of the marinade over the shrimp. Seal the bag and marinate in the refrigerator for 15-20 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp, red bell pepper, green bell pepper, red onion, and pineapple chunks onto the soaked wooden skewers, alternating the ingredients.
- Grill the skewers for 2-3 minutes on each side, or until the shrimp is pink and opaque, and the vegetables are slightly charred, basting with the remaining marinade while grilling.
