Ingredients
- 4 bone-in, skin-on chicken thighs
- 4 bone-in, skin-on chicken drumsticks
- 1 cup of pineapple juice
- 1/2 cup of soy sauce
- 1/4 cup of ketchup
- 1/4 cup of brown sugar
- 1/4 cup of rice vinegar
- 3 cloves of garlic, minced
- 1 tablespoon of grated ginger
- 1 teaspoon of sesame oil
- 1/2 teaspoon of black pepper
Instructions
- In a bowl, whisk together 1 cup of pineapple juice, 1/2 cup of soy sauce, 1/4 cup of ketchup, 1/4 cup of brown sugar, 1/4 cup of rice vinegar, 3 cloves of minced garlic, 1 tablespoon of grated ginger, 1 teaspoon of sesame oil, and 1/2 teaspoon of black pepper to make the marinade.
- Place the chicken thighs and drumsticks in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 4 hours, or overnight, turning the bag occasionally to ensure the chicken is evenly marinated.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and pat dry with paper towels.
- Grill the chicken, skin-side down, for 6-7 minutes. Flip the chicken and continue grilling for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
