Hawaiian BBQ Pork

Ingredients
- 3 lbs pork shoulder, cut into 2-inch pieces
- 1 cup pineapple juice
- 1/2 cup ketchup
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- In a slow cooker, combine 1 cup of pineapple juice, 1/2 cup of ketchup, 1/4 cup of soy sauce, 1/4 cup of brown sugar, 3 cloves of minced garlic, 1 teaspoon of grated ginger, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of red pepper flakes.
- Add 3 lbs of pork shoulder pieces to the slow cooker and toss to coat with the sauce.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the pork is tender and easily shreds with a fork.
- Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Set aside.
- In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry.
- Pour the remaining sauce from the slow cooker into a saucepan and bring to a simmer over medium heat.
- Stir in the cornstarch slurry and cook for 2-3 minutes, until the sauce thickens.
- Return the shredded pork to the slow cooker and pour the thickened sauce over the pork. Toss to coat the pork with the sauce.
- Cover and cook on low for an additional 30 minutes to allow the flavors to meld.
- Serve the Hawaiian BBQ pork hot with steamed rice and enjoy!
