Instructions

  • In a slow cooker, combine 1 cup of pineapple juice, 1/2 cup of ketchup, 1/4 cup of soy sauce, 1/4 cup of brown sugar, 3 cloves of minced garlic, 1 teaspoon of grated ginger, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of red pepper flakes.
  • Add 3 lbs of pork shoulder pieces to the slow cooker and toss to coat with the sauce.
  • Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the pork is tender and easily shreds with a fork.
  • Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Set aside.
  • In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry.
  • Pour the remaining sauce from the slow cooker into a saucepan and bring to a simmer over medium heat.
  • Stir in the cornstarch slurry and cook for 2-3 minutes, until the sauce thickens.
  • Return the shredded pork to the slow cooker and pour the thickened sauce over the pork. Toss to coat the pork with the sauce.
  • Cover and cook on low for an additional 30 minutes to allow the flavors to meld.
  • Serve the Hawaiian BBQ pork hot with steamed rice and enjoy!
