Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 large thinly sliced onions, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 20 minutes. Remove from heat and let cool.
  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the caramelized onions, 2 cups of diced ham, and 2 cups of shredded cheese.
  • Unroll the refrigerated pie crusts and use a 4-inch round cutter to cut out circles. You should get 6 circles from each crust, for a total of 24 circles.
  • Place about 2 tablespoons of the ham and cheese filling in the center of each circle. Brush the edges with beaten egg, then fold the dough over the filling to create a half-moon shape. Press the edges together with a fork to seal. Place the empanadas on the prepared baking sheet.
  • Brush the tops of the empanadas with the remaining beaten egg. Bake for 20-25 minutes, or until golden brown.
  • Allow the empanadas to cool for a few minutes before serving. Enjoy!
