Ingredients
- 4 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 4 slices of ham
- 1 cup shredded cheddar cheese
- 1 cup fresh spinach leaves
- 2 large flour tortillas
Instructions
- In a bowl, whisk together 4 large eggs, 1/4 cup of milk, and salt and pepper to taste.
- Heat a non-stick skillet over medium heat and pour in the egg mixture. Cook, stirring occasionally, until the eggs are scrambled and set. Remove from heat and set aside.
- Place 2 slices of ham on each tortilla, then divide the scrambled eggs equally between the two tortillas.
- Sprinkle 1/2 cup of shredded cheddar cheese over the eggs on each tortilla, then top with 1/2 cup of fresh spinach leaves on each.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form a wrap.
- Heat a large skillet over medium heat and place the wraps seam-side down. Cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
- Remove from the skillet and let cool for a minute before slicing each wrap in half. Serve and enjoy!
