Guinness Shepherd's Pie

Ingredients
- 1 1/2 pounds ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 cup Guinness beer
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 cup frozen peas
- 4 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the chopped onion, diced carrots, and minced garlic to the skillet. Cook for 5 minutes, or until the vegetables are tender.
- Stir in the flour and cook for 1 minute.
- Pour in the Guinness beer and beef broth, stirring to combine. Add the tomato paste, Worcestershire sauce, and dried thyme. Season with salt and pepper to taste. Simmer for 10 minutes, or until the mixture thickens.
- Stir in the frozen peas and cook for an additional 2 minutes.
- Transfer the beef mixture to a 9x13 inch baking dish. Spread the mashed potatoes over the top, smoothing with a spatula.
- Sprinkle the shredded cheddar cheese over the mashed potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the shepherd's pie is heated through and the cheese is melted and bubbly.
- Allow to cool for 5 minutes before serving. Enjoy!
