  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 large whole wheat tortillas
  • 1 cup of hummus
  • 1 cup of mixed salad greens

Instructions

  • Preheat a grill or grill pan over medium-high heat.
  • In a large bowl, toss the zucchini, red bell pepper, yellow bell pepper, and red onion with 2 tablespoons of olive oil. Season with salt and pepper.
  • Grill the vegetables for 3-4 minutes on each side, or until they are tender and have grill marks. Remove from the grill and set aside.
  • Warm the whole wheat tortillas on the grill for 1-2 minutes on each side.
  • Spread 1/4 cup of hummus onto each tortilla, leaving a border around the edges.
  • Divide the grilled vegetables and mixed salad greens evenly among the tortillas, placing them on top of the hummus.
  • Fold in the sides of the tortillas and then roll them up tightly, enclosing the filling.
  • Slice the wraps in half and serve immediately, or wrap them in foil for later. Enjoy!
