  • 1 cup of mushrooms, sliced

  • 4 slices of mozzarella cheese
  • 1/4 cup of pesto sauce

Instructions

  • Preheat a grill or grill pan over medium-high heat.
  • In a bowl, toss the zucchini, yellow bell pepper, red onion, and mushrooms with 2 tablespoons of olive oil. Season with salt and pepper.
  • Grill the vegetables for 3-4 minutes on each side, or until they are tender and have grill marks.
  • Assemble the panini by spreading 1 tablespoon of pesto sauce on each slice of bread. Place a slice of mozzarella cheese on each slice of bread.
  • Divide the grilled vegetables evenly on top of the cheese. Top with the remaining slices of bread.
  • Place the panini on the grill or grill pan and cook for 2-3 minutes on each side, or until the bread is toasted and the cheese is melted.
  • Remove from the grill, slice in half, and serve hot. Enjoy your delicious grilled vegetable panini!
