Grilled Vegetable Panini

Ingredients
- 1 zucchini, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 cup of mushrooms, sliced
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 4 slices of whole grain bread
- 4 slices of mozzarella cheese
- 1/4 cup of pesto sauce
Instructions
- Preheat a grill or grill pan over medium-high heat.
- In a bowl, toss the zucchini, yellow bell pepper, red onion, and mushrooms with 2 tablespoons of olive oil. Season with salt and pepper.
- Grill the vegetables for 3-4 minutes on each side, or until they are tender and have grill marks.
- Assemble the panini by spreading 1 tablespoon of pesto sauce on each slice of bread. Place a slice of mozzarella cheese on each slice of bread.
- Divide the grilled vegetables evenly on top of the cheese. Top with the remaining slices of bread.
- Place the panini on the grill or grill pan and cook for 2-3 minutes on each side, or until the bread is toasted and the cheese is melted.
