Ingredients
- 2 bell peppers, cut into chunks
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, cut into chunks
- 8 cherry tomatoes
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 2 cloves minced garlic, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Thread the bell peppers, zucchini, yellow squash, red onion, and cherry tomatoes onto skewers, alternating the vegetables as you go.
- Brush the vegetable skewers with the olive oil and balsamic mixture.
- Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
