  • 1/4 cup balsamic vinaigrette

Instructions

  • Preheat grill to medium-high heat.
  • In a large bowl, toss the red bell pepper, yellow bell pepper, zucchini, yellow squash, and red onion with 2 tablespoons of olive oil. Season with salt and pepper.
  • Place the vegetables on the grill and cook for 3-4 minutes per side, or until grill marks appear and the vegetables are tender.
  • Remove the grilled vegetables from the grill and let them cool for a few minutes.
  • In a large salad bowl, combine the mixed salad greens with the grilled vegetables.
  • Sprinkle the crumbled feta cheese over the salad.
  • Drizzle the balsamic vinaigrette over the salad and toss to combine.
