Ingredients
- 4 swordfish steaks, about 6 ounces each
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 ripe mangoes, peeled, pitted, and diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 1 tablespoon honey
- 1/4 teaspoon cayenne pepper
Instructions
- Preheat grill to medium-high heat.
- Brush swordfish steaks with olive oil and season with salt and pepper.
- Grill swordfish for 4-5 minutes on each side, or until cooked through and grill marks appear. Remove from grill and let rest for a few minutes.
- In a medium bowl, combine diced mangoes, red onion, red bell pepper, jalapeno pepper, and cilantro.
- In a small bowl, whisk together lime juice, honey, and cayenne pepper. Pour over the mango mixture and toss to combine.
- Serve grilled swordfish topped with mango salsa. Enjoy!
