Instructions

  • In a small bowl, whisk together 1/4 cup of olive oil, 3 cloves of minced garlic, 2 tablespoons of fresh lime juice, 1 teaspoon of chili powder, 1/2 teaspoon of cayenne pepper, and 1/2 teaspoon of salt to create the spicy chili lime marinade.
  • Place the peeled and deveined shrimp in a resealable plastic bag and pour the marinade over the shrimp. Seal the bag and refrigerate for at least 30 minutes to marinate.
  • Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers, if desired.
  • In a small saucepan, melt 1/4 cup of unsalted butter over low heat. Stir in 2 tablespoons of chopped fresh parsley and continue to cook for 1-2 minutes. Remove from heat and set aside.
  • Grill the marinated shrimp for 2-3 minutes per side, or until they are pink and opaque.
  • Brush the grilled shrimp with the garlic butter sauce and serve immediately. Enjoy!
