Ingredients
- 4 salmon fillets (6 ounces each)
- 1 pound of asparagus, trimmed
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of lemon zest
- 1 tablespoon of lemon juice
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 1 tablespoon of olive oil, minced garlic, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Brush the salmon fillets with the olive oil mixture and set aside to marinate for 10 minutes.
- Toss the trimmed asparagus with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Place the asparagus on a baking sheet and roast in the preheated oven at 400°F for 12-15 minutes, or until tender and slightly charred.
