Grilled Salmon with Lemon Dill Quinoa

Ingredients
- 4 salmon fillets (6 oz each)
- 1 cup quinoa
- 2 cups chicken or vegetable broth
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water and drain well.
- In a medium saucepan, bring the broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and stir in the chopped dill, lemon juice, and salt and pepper to taste. Keep warm.
- Preheat the grill to medium-high heat.
- Brush the salmon fillets with olive oil and season with salt and pepper.
- Grill the salmon for 4-5 minutes on each side, or until the fish flakes easily with a fork.
- In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in the remaining lemon juice and chopped dill to make the lemon dill sauce.
- Serve the grilled salmon over the lemon dill quinoa, and drizzle with the lemon dill sauce. Enjoy!
