Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup of unsalted butter, melted
- 2 tablespoons of fresh lemon juice
- 1 teaspoon of lemon zest
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 pound of mixed vegetables (such as bell peppers, zucchini, and red onion), cut into chunks
- 2 tablespoons of olive oil
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of dried rosemary
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 1/4 cup of melted butter, 2 tablespoons of fresh lemon juice, 1 teaspoon of lemon zest, 2 cloves of minced garlic, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Set aside.
- In a large bowl, toss the mixed vegetables with 2 tablespoons of olive oil, 1/2 teaspoon of garlic powder, 1/2 teaspoon of dried thyme, 1/2 teaspoon of dried rosemary, and salt and pepper to taste. Spread the vegetables in a single layer on a baking sheet.
- Place the salmon fillets on the preheated grill and cook for 4-5 minutes per side, or until the fish flakes easily with a fork.
- While the salmon is grilling, roast the vegetables in the oven at 400°F for 20-25 minutes, or until they are tender and slightly browned.
- Once the salmon and vegetables are cooked, drizzle the lemon butter sauce over the grilled salmon and serve with the roasted vegetables. Enjoy!
Grilled Salmon with Lemon Butter and Roasted Vegetables is a classic dish that has its roots in the Pacific Northwest, where fresh salmon is abundant. The dish is a celebration of the region's bountiful seafood and vibrant produce. Renowned chefs like Tom Douglas and Ethan Stowell have popularized this dish in their Seattle restaurants, infusing it with their own unique twists. The key to this dish is the perfect balance of flavors - the smoky char from the grilled salmon, the tangy brightness of the lemon butter, and the caramelized sweetness of the roasted vegetables. It's a dish that showcases the natural beauty of the ingredients and the skill of the chef. Today, the best versions of this dish can be found in top seafood restaurants in Seattle, Portland, and Vancouver, where chefs continue to innovate and elevate this classic recipe. The key to getting it right lies in sourcing the freshest salmon, using high-quality butter, and carefully selecting a variety of colorful vegetables for roasting. For a unique twist, some chefs also incorporate a cedar plank into the grilling process, infusing the salmon with a subtle woodsy flavor. This method adds an extra layer of complexity to the dish, making it a standout on any menu. Whether enjoyed in a fine dining establishment or prepared at home, Grilled Salmon with Lemon Butter and Roasted Vegetables is a timeless dish that captures the essence of the Pacific Northwest's culinary heritage.
