Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup of unsalted butter, melted
- 2 tablespoons of fresh lemon juice
- 1 teaspoon of lemon zest
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 pound of mixed vegetables (such as bell peppers, zucchini, and red onion), cut into chunks
- 2 tablespoons of olive oil
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of dried rosemary
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 1/4 cup of melted butter, 2 tablespoons of fresh lemon juice, 1 teaspoon of lemon zest, 2 cloves of minced garlic, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Set aside.
