  • 1 cup brown rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 lemon, sliced
  • Fresh parsley for garnish

Instructions

  • Preheat grill to medium-high heat.
  • Rinse the brown rice under cold water and drain. In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice, reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and the water is absorbed.
  • While the rice is cooking, brush the salmon fillets with 1 tablespoon of olive oil and season with salt, black pepper, and garlic powder.
  • Place the salmon fillets on the preheated grill and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork.
  • In a large serving platter, arrange the cooked brown rice and place the grilled salmon fillets on top. Drizzle with the remaining olive oil and garnish with lemon slices and fresh parsley.
  • Serve immediately and enjoy!
