Instructions

  • Preheat the grill to medium-high heat.
  • In a small saucepan, combine 1/2 cup balsamic vinegar, 1/4 cup honey, minced garlic, and Dijon mustard. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the glaze has thickened. Set aside.
  • Brush the salmon fillets with 1 tbsp of olive oil and season with salt and pepper.
  • Place the salmon fillets on the grill and cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork. During the last minute of cooking, brush the salmon with the balsamic glaze.
  • While the salmon is grilling, toss the mixed vegetables with 1 tbsp of olive oil, salt, and pepper. Place the vegetables on a grill basket or a piece of foil and grill for 10-12 minutes, or until they are tender and slightly charred.
