Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups of fresh pineapple, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and finely chopped
- 1/4 cup of fresh cilantro, chopped
- 1 lime, juiced
- 1 tablespoon of olive oil
- 1 teaspoon of honey
- 1 teaspoon of cumin
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with salt, pepper, and cumin.
- In a bowl, combine the diced pineapple, red onion, jalapeno, cilantro, lime juice, olive oil, honey, and a pinch of salt. Mix well to make the salsa.
- Grill the chicken breasts for 6-7 minutes on each side, or until fully cooked and grill marks appear.
- During the last 2 minutes of grilling, place the pineapple slices on the grill and cook until they have grill marks.
- Remove the chicken and pineapple from the grill and let them rest for a few minutes.
- Serve the grilled chicken topped with the grilled pineapple salsa.
