Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a small bowl, whisk together 1/4 cup soy sauce, 1/4 cup honey, 2 tablespoons olive oil, 2 cloves minced garlic, 1 teaspoon ground ginger, and 1/2 teaspoon black pepper to make the marinade.
- Place the chicken cubes in a resealable plastic bag and pour half of the marinade over the chicken. Seal the bag and marinate in the refrigerator for at least 1 hour, or overnight for best results.

- Thread the marinated chicken cubes and pineapple chunks onto the soaked wooden skewers, alternating between chicken and pineapple.
