Ingredients
- 4 ripe peaches, halved and pitted
- 1/4 cup of sugar
- 1 teaspoon of vanilla extract
- 1 cup of fresh raspberries
- 2 tablespoons of honey
- 1 pint of vanilla ice cream
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 1/4 cup of sugar and 1 teaspoon of vanilla extract.
- Brush the cut side of each peach half with the sugar and vanilla mixture.
- Place the peaches on the grill, cut side down, and cook for 3-4 minutes, until grill marks appear and the peaches are slightly softened.
- In a blender, puree the raspberries and honey until smooth. Strain the mixture through a fine-mesh sieve to remove the seeds, if desired.
- To serve, place two grilled peach halves on each plate, top with a scoop of vanilla ice cream, and drizzle with the raspberry sauce.
- Enjoy immediately!
