Instructions

  • Preheat the grill to medium-high heat.
  • In a small bowl, mix together 1/4 cup of sugar and 1 teaspoon of vanilla extract.
  • Brush the cut side of each peach half with the sugar and vanilla mixture.
  • Place the peaches on the grill, cut side down, and cook for 3-4 minutes, until grill marks appear and the peaches are slightly softened.
  • In a blender, puree the raspberries and honey until smooth. Strain the mixture through a fine-mesh sieve to remove the seeds, if desired.
  • To serve, place two grilled peach halves on each plate, top with a scoop of vanilla ice cream, and drizzle with the raspberry sauce.
  • Enjoy immediately!
