  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 zucchinis, sliced
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat the grill to medium-high heat.
  • In a small bowl, whisk together the lemon juice, lemon zest, garlic, olive oil, parsley, dill, 1 tsp salt, and 1/2 tsp black pepper.
  • Place the salmon fillets in a shallow dish and pour the lemon herb marinade over them. Let them marinate for 10 minutes.
  • In a separate bowl, toss the cherry tomatoes, bell peppers, red onion, and zucchinis with balsamic vinegar, honey, 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper.
  • Thread the vegetables onto skewers and place them on the grill. Cook for 10-12 minutes, turning occasionally, until they are tender and slightly charred.
