Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup olive oil
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups wild rice
- 4 cups water or chicken broth
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix together 1/4 cup olive oil, minced garlic, lemon zest, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Brush the lemon garlic mixture over the salmon fillets, coating them evenly. Let them marinate for 10 minutes.
- While the salmon is marinating, rinse the wild rice under cold water. In a medium saucepan, bring 4 cups of water or chicken broth to a boil. Add the wild rice, reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Place the marinated salmon fillets on the preheated grill. Grill for 4-5 minutes on each side, or until the salmon is cooked through and has grill marks.
- Fluff the cooked wild rice with a fork and stir in chopped fresh parsley.
