Instructions

  • In a small bowl, whisk together 1/4 cup olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and black pepper.
  • Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
  • While the salmon is marinating, rinse the quinoa under cold water. In a medium saucepan, bring 4 cups of water or chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.
  • Preheat the grill to medium-high heat. Remove the salmon from the marinade and discard the excess marinade. Grill the salmon for 4-5 minutes per side, or until it flakes easily with a fork.
  • Serve the grilled lemon garlic salmon over a bed of quinoa, garnished with fresh parsley. Enjoy!
