Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup olive oil
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups quinoa
- 4 cups water or chicken broth
- Fresh parsley for garnish
Instructions
- In a small bowl, whisk together 1/4 cup olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and black pepper.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
- While the salmon is marinating, rinse the quinoa under cold water. In a medium saucepan, bring 4 cups of water or chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.
- Preheat the grill to medium-high heat. Remove the salmon from the marinade and discard the excess marinade. Grill the salmon for 4-5 minutes per side, or until it flakes easily with a fork.
- Serve the grilled lemon garlic salmon over a bed of quinoa, garnished with fresh parsley. Enjoy!
