Ingredients
- 4 salmon fillets (6 oz each)
- 2 lemons, juiced and zested
- 4 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, seeded and minced
- 2 tbsp lime juice
- 1/4 tsp cayenne pepper
- 1/4 tsp cumin
- Salt to taste
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix together the lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper. Brush the mixture over the salmon fillets, coating them evenly.
- Place the salmon fillets on the grill and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and set aside.
- In a medium bowl, combine the diced mangoes, red onion, red bell pepper, cilantro, jalapeno, lime juice, cayenne pepper, cumin, and salt. Mix well to combine.
- Top the grilled salmon fillets with the mango salsa and serve immediately.
