Instructions

  • Preheat grill to medium-high heat.
  • In a small bowl, whisk together 1/4 cup olive oil, minced garlic, lemon zest, and lemon juice. Season halibut fillets with salt and pepper, then brush with the olive oil mixture.
  • Grill the halibut fillets for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove from grill and set aside.
  • In a medium saucepan, bring the chicken or vegetable broth to a boil. Stir in the quinoa, reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the liquid is absorbed.
