Ingredients
- 4 halibut fillets (6 oz each)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 cup quinoa
- 2 cups chicken or vegetable broth
- 1/4 cup chopped fresh dill
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup olive oil, minced garlic, lemon zest, and lemon juice. Season halibut fillets with salt and pepper, then brush with the olive oil mixture.
- Grill the halibut fillets for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove from grill and set aside.
- In a medium saucepan, bring the chicken or vegetable broth to a boil. Stir in the quinoa, reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the liquid is absorbed.
- Fluff the quinoa with a fork and stir in the chopped dill. Season with salt and pepper to taste.
- To serve, spoon the lemon dill quinoa onto plates and top with grilled halibut fillets. Garnish with additional dill and lemon wedges if desired. Enjoy!
