- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
Instructions
- Preheat the grill to medium-high heat (about 375-400°F).
- In a small bowl, mix together 2 tablespoons of olive oil, 2 teaspoons of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1/2 teaspoon of onion powder, 1/2 teaspoon of dried thyme, and 1/2 teaspoon of dried oregano to create a spice rub.
- Pat the chicken thighs dry with paper towels and then rub the spice mixture all over the chicken, making sure to coat each piece evenly.
- Place the chicken thighs on the grill, skin side down, and cook for 6-7 minutes with the lid closed.
- Flip the chicken thighs and continue grilling for another 6-7 minutes with the lid closed, or until the internal temperature reaches 165°F.
