Instructions

  • Preheat a grill or grill pan to medium-high heat.
  • Brush the chicken breasts with 1 tablespoon of olive oil and season with salt and pepper.
  • Grill the chicken for 6-7 minutes per side, or until cooked through. Remove from the grill and let rest for 5 minutes before slicing.
  • Assemble the panini by placing a slice of mozzarella on each slice of ciabatta bread. Top with the grilled chicken slices, tomato slices, and basil leaves. Drizzle with balsamic glaze and cover with the remaining slices of bread.
  • Heat a panini press or a large skillet over medium heat. If using a skillet, place a heavy pan on top of the sandwiches to press them down while cooking.
  • Place the assembled panini in the panini press or skillet and cook for 3-4 minutes, or until the bread is golden brown and the cheese is melted.
