Ingredients
- 4 boneless, skinless chicken breasts
- 1 bunch of kale, stems removed and chopped
- 1/2 cup of grated parmesan cheese
- 1/2 cup of Caesar dressing
- 1/4 cup of olive oil
- 2 cloves of garlic, minced
- Salt and pepper to taste
- 1 lemon, juiced
- 4 cups of croutons
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, whisk together the olive oil, garlic, and lemon juice. Season with salt and pepper.
- Brush the chicken breasts with the olive oil mixture and grill for 6-7 minutes on each side, or until cooked through. Set aside to rest.
- In a large bowl, massage the chopped kale with a little olive oil and a pinch of salt for a few minutes to soften it.
- Add the Caesar dressing to the kale and toss to coat. Add half of the parmesan cheese and toss again.
- Divide the kale mixture onto 4 plates and top with grilled chicken slices.
- Sprinkle the remaining parmesan cheese and croutons over the salads.
- Serve immediately and enjoy!
