Tangy Mango Glazed Grilled Chicken
Created by: Howcan Team
Ingredients
- 4 boneless, skinless chicken breasts
- 2 ripe mangoes, peeled and diced
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a blender or food processor, combine the diced mangoes, soy sauce, honey, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes. Blend until smooth to create the mango glaze.
- Season the chicken breasts with salt and pepper, then place them in a resealable plastic bag or shallow dish.
- Pour half of the mango glaze over the chicken, making sure to coat each piece evenly. Reserve the remaining glaze for basting and serving.
- Marinate the chicken in the refrigerator for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat and lightly oil the grate.
- Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C), basting with the reserved mango glaze during the last few minutes of grilling.
- Once cooked, transfer the grilled chicken to a serving platter and let it rest for a few minutes before serving.
- Serve the tangy mango glazed grilled chicken with the remaining mango glaze on the side for dipping or drizzling.
