Instructions

  • In a blender or food processor, combine the diced mangoes, soy sauce, honey, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes. Blend until smooth to create the mango glaze.
  • Season the chicken breasts with salt and pepper, then place them in a resealable plastic bag or shallow dish.
  • Pour half of the mango glaze over the chicken, making sure to coat each piece evenly. Reserve the remaining glaze for basting and serving.
  • Marinate the chicken in the refrigerator for at least 2 hours, or overnight for best results.
  • Preheat the grill to medium-high heat and lightly oil the grate.
  • Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C), basting with the reserved mango glaze during the last few minutes of grilling.
  • Once cooked, transfer the grilled chicken to a serving platter and let it rest for a few minutes before serving.
