Instructions

  • In a small bowl, mix together 2 tbsp chili powder, 1 tbsp paprika, 1 tbsp brown sugar, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp cayenne pepper, 1/2 tsp salt, and 1/2 tsp black pepper to create the spicy rub.
  • Rub the spicy mixture onto both sides of the bison steaks, then drizzle with 2 tbsp of olive oil and let them sit at room temperature for 10 minutes.
  • Preheat the grill to high heat.
  • Place the bison steaks on the grill and cook for 4-5 minutes on each side for medium-rare, or longer if desired.
  • Remove the steaks from the grill and let them rest for 5 minutes before serving.
