Created by: Howcan Team
Ingredients
- 4 bison steaks (6 oz each)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup red wine
- 1/2 cup beef broth
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
Instructions
- Preheat grill to high heat.
- Brush bison steaks with olive oil and season with salt and pepper.
- Grill steaks for 4-5 minutes on each side for medium-rare, or to desired doneness. Remove from grill and let rest for 5 minutes.
- While the steaks are resting, prepare the red wine reduction sauce. In a saucepan, combine red wine, beef broth, garlic, and thyme. Bring to a simmer over medium heat and cook until the liquid is reduced by half, about 10 minutes.
- Remove the saucepan from the heat and whisk in the butter until melted and the sauce is smooth. Season with salt and pepper to taste.
- To serve, spoon the red wine reduction sauce over the grilled bison steaks and enjoy!
Grilled Bison Steaks with a red wine reduction sauce have a rich history rooted in the American West. Bison, once nearly extinct, has made a comeback on menus across the country. Chefs like Bobby Flay and Gordon Ramsay have popularized this dish, infusing it with their own unique twists. The smoky flavor of the grilled bison pairs perfectly with the deep, complex flavors of the red wine reduction sauce. The best version of this dish can be found in upscale steakhouses and fine dining restaurants, where the quality of the bison and the expertise in preparing the reduction sauce are paramount. For a unique twist, some chefs also incorporate local herbs and spices to elevate the flavors.
