Instructions

  • Preheat grill to high heat.
  • Brush bison steaks with olive oil and season with salt and pepper.
  • Grill steaks for 4-5 minutes on each side for medium-rare, or to desired doneness. Remove from grill and let rest for 5 minutes.
  • While the steaks are resting, prepare the red wine reduction sauce. In a saucepan, combine red wine, beef broth, garlic, and thyme. Bring to a simmer over medium heat and cook until the liquid is reduced by half, about 10 minutes.
  • Remove the saucepan from the heat and whisk in the butter until melted and the sauce is smooth. Season with salt and pepper to taste.
  • To serve, spoon the red wine reduction sauce over the grilled bison steaks and enjoy!
